Franco Manca serves what is probably the best pizza in London. It has to be good because new venues keep popping up all around the UK. The secret is in the dough, which is made of slow-rising sourdough and blast-heated in a Neapolitan wood fire oven. Sounds exciting? Well, this makes a crispy and light crust, easy to digest. No need to make reservations, it is on a first come, first serve basis. You have to try it! I selected the one in Bermondsey Street to map them because it is a lovely area worth exploring. There are charming shops and restaurants all along it, from behind the Borough Market all the way to the White Cube Gallery.
